We have grown along with it, and as a result, we have been successful. It has been through this growth that we have become a staple in our community. Our statement of farm to table is our truth. We support as many local growers as we can because it is the local community who support us day in and day out. We truly love being a part of this amazing community.

We exclusively offer a prix fixe tasting menu experience, with 7-Course and a 10-Course options. Both experiences are meant to honor the complex history that created each dish, as well as leave a lasting impact on all those who taste this beautiful food and listen to our stories. República is a tasting menu-only restaurant. We offer a 7-course menu at $128 or a 10-course menu at $150 per person. We kindly require all guests to disclose all dietary restrictions and allergies prior to their reservation. We are unable to accommodate allergies to nightshades, chile, allium, rice . Additionally we are not a gluten free kitchen and are unable to provide nut and seed free diners. Please note our menu offerings change daily.What you see below, is NOT our current menu.
