That restaurant would become C&S Oyster Bar, specializing in classic New York and Paris brasserie-style cuisine. Clark possesses a passion for French cuisine and claims that it comes from the French’s appreciation for balance. Their focus on vegetables, fish, and meat as the primary vehicles of flavor allow for emphasis to be placed on the freshness of the ingredients. Proper attire required.
