Back after more than a two year closure following the George IV Bridge in late 2021, Merchants has undergone a full refurbishment. Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh. Braised shin of beef, haggis and seared seabass are some of the dishes on an ever-changing menu, and the restaurant is happy to try and cater for any specific dietary requirements. Situated at 17 Merchant Street, Merchants Restaurant is proud to use fresh, locally sourced produce in its dishes. We didn't eat but food looked and smelled lovely. The staff are brilliant and made our evening absolutely lovely. Wish we could have stayed longer but had a dinner engagement to get to. Will definitely return.

Cold town house is a beautiful atmosphere and the staff were incredible. Our server Amy was so lovely and bubbly, she recommended cocktails which were absolutely divine !! Overall we loved the food the drinks and the staff.

Fantastic food, great service. From the Haggis Spring roll to the Chocolate pave each course was superb. Decent and well priced wine list too. A great date night for my wife and I.

We had a lovely lunch which was well presented and cooked. We found the portion size quite large so some of our party only had starters which were very satisfying and adequate for us. The staff were very efficient and friendly, chatting when they had time to spend with us.
