Water Lane is a restaurant based within a working market garden in the High Weald of Kent. Guided by the seasons, our menu reflects its sense of place in the English countryside where we grow our own vegetables and use local suppliers. Our ever changing menu is simple but prepared with imagination and care by our Head Chef Jed Wrobel and his team.The Good Food Guide 2023 describes us as 'A contender for one of the most charming eateries in Kent, it's pretty much impossible to resist the lure of this rural restaurant tucked away in a delightful walled garden...' We are open Friday to Sunday 10am - 4.30pm, serving breakfast 10am to 11.30am and lunch 12pm - 3pm. We serve dinner on Friday and Saturday evenings between 6pm - 8.30pm. Our restaurant is currently located in the Carnation House glasshouse. We welcome well behaved dogs on a leash in our garden.

The Royal is operated by James Hickson, who has a solid hospitality background having learned his trade at well-loved restaurants and gastropubs including St John, Great Queen Street, The Canton Arms and Moro. James is hands-on at the pub, overseeing the relaxed yet lively atmosphere, friendly service and sophisticated food and drink. The kitchen is led by head chef, Andrew Taylor-Gray, who has previously worked at Petersham Nurseries, Hix and The Canton Arms.The Royal has been included in the Michelin Guide since February 2020 with Bib Gourmand status, which we have maintained ever since.A welcoming gastropub for locals and visitors alike in St. Leonards-On-Sea and Hastings, low-key and down-to-earth, The Royal occupies an historic corner site right opposite St. Leonards Warrior Square station.

At the heart of the kitchen is a wood-charcoal grill, where our kitchen team roast seafood landed that day from fishermen based in Rye Harbour. The Two Sawyers is a 16th Century Inn recently refurbished and under family ownership. We pride ourselves on serving excellent beer and food. We have a large beer garden to the rear of the pub with over 30 tables for our guests to use for both drinking and dining. A character bar with log fires serving guest ales, beers, and wines. The restaurant serves traditional pub food twice both lunch and evening and all day on both Saturday and Sunday.

We make British food with a classic or modern slant. We source our ingredients from the local fields, woodlands and waters. Everything is cooked on the premises, including the sourdough bread and the icecreams.The Good Food Guide (2023) says: "A fittingly quaint old building, complete with original features, given a suave modern twist via grey panelling and contemporary furniture. BAYTE, is a modern European neighbourhood restaurant with an emphasis on local sourcing and quality produce in the seaside town of St Leonards-on-Sea. The seasonal menu blends influences from across the globe, with particular reference to Italian recipes, such as hand-rolled pastas.The meat at BAYTE is free-range and reared on biodynamic, organic Haye Farm in Devon. We are a country Gastropub owned by farmers. Our farm supplies the beef, lamb and pork and we source other ingredients from local producers where we can. Our small seasonal menu changes regularly reflecting what is available in our area. We pride ourselves on being very much a country pub, offering freshly prepared seasonal food and a warm welcome. We also love offering locally produced drinks, such as gins, rums, ales and wines, giving you the complete taste of Sussex. Our weekend menu is our delicious Asado Grill. A slightly reduced but very tasty BBQ menu, where everything is cooked on our outdoor grill. We advise to book in as we get very busy!

ミシェラン１つ星ですが、比較的予約しやすかったです（前日に予約できました）。肉料理、特に骨髄や肝臓といった内蔵料理が有名で、実際ボリュームもあり、濃厚で美味しかったです。ワインも手頃な料金のものが多数揃っていました。もしお肉料理がお好きならお薦めです。
