Gilson offers an all day menu focusing on Italian cuisine and seasonal flavours. A neighbourhood favourite due to its relaxed setting, friendly staff, fabulous drinks list and dishes such as the ‘avocado bruschetta’ for breakfast, the ‘Seafood Linguine' for lunch or dinner, and a 'tiramisu' for dessert. Wood fired pizza is also available for lunch and dinner cooked in the custom built oven.Gilson's brunch service is available for walk-ins with reservations available from midday.

We offer a bar space, an upstairs restaurant dining room and three unique spaces that are can be booked for private dining perfect for special events.RESERVATIONS: are for a two hour sitting. A surcharge of 10% applies on Sundays and 15% on Public Holidays.     This was an exceptional experience. Everything had been thought out to the minute detail. We have been to many 3* Michelin restaurants in Europe and this restaurant equates to the best. The food was wonderful , the service second to none. The culinary theatre was spectacular. You felt the team worked like a well oiled machine. Everyone pitched in, down to the sommelier also waiting on table. You felt that this was a culinary family who were keen to ensure that every diner had the very best experience. This meal was a celebration of our 50 th wedding anniversary and the team were keen to acknowledge this. There were so many nice touches that there were too many to mention individually. The wine parings were super and the sommelier was helpful, well informed and above all enthusiastic about the wines he had on his list. This is a real gem one that Melbourne and Australia should be really proud of. We can not recommend it more highly.

    Carlton wine room is a well oiled machine. A genuine effort to make the dining experience special but still remain approachable and keeping the vibe. Took my partner there last night for her birthday and it’s one of the best dining experiences I’ve had in a few years. Well done guys, we’ll be back!

    We went for the Feed Me menu after seeing a show at The Princess Theatre. Being vegan our options were limited but every plate was super delicious! The staff were engaging, friendly and helpful. Although we had a small table almost in a corner it didn't feel cramped and we hardly noticed the diners around us. Great value. Great location. Amazing food. Highly recommend
