Bu'ul is the restaurant of the Chablé Maroma hotel, recommended in the 2024 MICHELIN Guide. Its cuisine is in charge of our corporate chef Jorge Vallejo, recipient of two MICHELIN stars for his Quintonil restaurant in Mexico City.Freshness, seasonality and personality converge on the plate at Bu'ul, with contemporary cuisine influenced by the culinary traditions of Southern Mexico, complemented by a spectacular wine list. Bu’ul is the Mayan word for "bean". The decoration and architecture of Bu'ul is sublime, with indoor seating in a spacious, inviting ambiance featuring artistically rendered local materials, and outdoor seating serenaded by the sound of the waves.
