Enjoy creatively prepared American fare at Von's 1000Spirits Gusto Bistro. This charming spot features various flags draped across the ceiling and an open kitchen where patrons can watch the chefs at work. Owner Merrisa Firnstahl-Claridge and Executive Chef Jason Amador delight in offering delicious food with friendly service in a comfortable atmosphere. Patrons can choose from entrées like salmon cakes with pickled vegetables, homemade meatballs with pasta or a hoisin-glazed prime rib burger at Von's 1000Spirits Gusto Bistro. Sourdough pizza with a choice of toppings, salads, hearty sandwiches and vegetarian dishes also make for fulfilling meals. Von's 1000Spirits Gusto Bistro is featured in publications such as The Seattle Times and The Stranger. We opened our first pizzeria in 2004 in the burgeoning Capitol Hill neighborhood. For months before we opened curious onlookers poked their heads in the former auto body shop, and outlandish rumors spread. One person saw a team of masons reportedly flown in from Naples to build a gargantuan wood-fired oven, someone heard that the bricks also came from Naples rich with Vesuvian ash, a reporter ran a story about a taxi driver leading our owner down a dark Neaopolitan street to meet a talented Pizzaiolo who was then whisked to an airport….As it turns out almost all of the tall tales are true – on opening night people lined up for the authentic Neaopolitan pizza and since then our ovens have only gotten busier. Via Tribunali has been called "more authentic than the pizzerias of Naples," and even though that is a flattering exaggeration it is fair to say that our pizzerias have grown out of an almost unnatural passion for the food & wine of Southern Italy.

    Dinner was fantastic. Our server asked if we had any time restrictions, as they were busy and we had a show to get to. She was very straightforward about what could be done in time and what to avoid. We ordered accordingly and everything was top notch. Perfect portion size and we were in and out in less than 40 minutes on a busy Saturday night. We will be back!

    This restaurant according to our server has only been open 1.5 years. I would say that their ranking should be within the top ten level as everything that we encountered was delightful. The canneloni was tantalizing to the taste buds and the broccoli salad was crisp and flavourful. I could have dined only on the Focacci bread was so good that it could have been the entree. Like most retaurants downtown you should be used to utilizing a parkade as there is no street parking. Yes when in town we will dine there again.

    Our Happy Hour orders were perfection. Sardines, salads, clams. Our dinner orders were superb. My wife’s fish was perfectly cooked. Moist & tender meat & crispy skin. My chicken was cooked very well. Soft & tender meat. Only complaint was our bread was cold & it took awhile for our main course to arrive. But other than that hiccup, everything was great. Our servers were attentive to our table. Would mind going back at all or trying the other Sea Creature restos
