The Japanese film Tampopo was marketed as the world’s first “ramen western”. It’s the story of two truck drivers, Goro & Gun, who use their culinary expertise to change the fate of a struggling noodle shop. Those two characters' passion for noodle-making lives on at Calgary’s 150-seat noodle bar — led by executive chef Ryusuke Araki. Located inside Stephen Avenue Place, upstairs on the Plus 15 level, the restaurant melds modern art graphics with distinctive hardwood and right angles of Japanese decor. Tuck into a steaming bowl of ramen with our house-made noodles, made even better with an aji-tama egg. Or depart from noodle fare with house specialities like tuna poke or pork steam buns. Our menu boasts a variety of vegetarian, gluten, and dairy-free options. Whenever possible, dishes are prepared using wild fish instead of farmed. Located inside the Westley Hotel in the heart of Downtown Calgary, Fonda Fora is an exciting new contemporary Mexican restaurant brought to you by the folks at Thank You Hospitality. Chef Jhonattan Lona has crafted a menu based on his upbringing in Querétaro and his journey in kitchens across the world. Much of our concept is based around the heirloom corn of Mexico. We import four types of corn from a collective of heirloom farms in Mexico in order to provide the best product we can. We process this corn from raw and turn it into masa for dishes all across our menu, like our Sope, Tamal, and of course, Tortillas. There is a saying in Mexico that we live by at Fonda Fora: "Sin maíz no hay país," meaning without corn, there is no country. Maíz is the lifeblood of Mexican cuisine, and we are excited to present it to you as it should be.
