We all grew up in spaces that equated food with love, just like this place. Everything we have done here is deliberate, from the art on the walls to the produce we use. We've made a point of sourcing ingredients from some of the best suppliers in the state, making sure that our menu reflects what's in season. For us, this place is about experience: we try our best to make you feel both at home and 'out for something special'.     We had an outstanding experience at Gilbee's. It went well beyond what we were expecting from a local eatery, with both the food and service at a standard you'd expect at a high-end restaurant. Every waiter we encountered was personable, knowledgable and, most importantly, warm and friendly without being overbearing or saccharine. The food was something else - clever cookery using the freshest of ingredients. We had the "local's night" set menu which included a variety of seafood presented beautifully. Layers of flavour in every dish, mussels and fish cooked to absolute perfection, crisp croquettes, and fluffy focaccia with airy whipped butter. We indulged in a single piece of the burnt basque cheesecake for dessert as an optional add-on and I wished we'd bought two! It was light and creamy, but rich in flavour. I'd recommend it without hesitation - we're already planning our next visit and deciding which lucky people we will bring with us next time!

    Took my partner here for her birthday and the food was an absolute ripper! We had a Fiano wine that went perfectly well with our food. The owner was very warm and welcoming . Highly recommend

    We have been to Spensley's close to 10 times now over the past year! It is our favourite place to come for a relaxing and tasty meal. We bring all our visitors here (we are originally from the UK) to showcase one of the best restaurants we have found during our time in Melbourne. The food is spectacular for the value (feed me menu is always worth it!). We will be becoming back!
