Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh. Black-kilted porters escort you to Rhubarb's two oval Regency dining rooms decorated in baroque splendour, with giant chandeliers, silk wall coverings, and ancestral portraits. The menu, created by chef John McMahon, uses classic techniques and modern inspiration to transform ingredients into sublime grub. Popular dishes include the Gewurztraminer poached foie gras, the breast of Loue chicken on tarragon risotto, and the assiette of rhubarb desserts. There are more than five hundred wines to choose from, and more than one hundred malts.

Found whilst walking on the Royal Mile, it was a great discovery. Very cosy ambience, large plates and a vast selection of delicious cocktails. We had a really nice time!

This is not a cheap option for lunch, but for a special occasion or treat, it is one of my favourite places in Edinburgh. The food, service and ambience are consistently exceptional. Definitely need to book in advance. The phone was busy all lunchtime with people looking for a table that night but they were fully booked.
