As Portland’s sake scene flourished, Zilla remained at the forefront, offering a meticulously curated selection of both popular and exclusive sake varieties, hand-picked by the owner. The summer of 2008 marked a pivotal moment with the introduction of Zilla’s sushi bar by head chef Kate Koo, transforming the venue into a high-end sushi destination steeped in tradition. By 2016, Kate Koo took full ownership of Zilla Sake, where she continues to artfully blend innovation with time-honored practices, creating a dining experience that honors the past while embracing the future.
