Beautiful, modern restaurant. The menu is always a chefs tasting. The evening starts with a drink and 4 amuse bouche in the lounge/bar area. The chef/owner, Matthias, comes out afterward to talk you through the menu. You have the choice of a 4 or 6 course tasting accompanied by wine or sparkling tasting for an additional charge as well as a cheese tasting for an additional charge. We opted for the 4 course with wine and the cheese and it was plenty of food the whole meal took over 4 hours so you are well paced in between courses to digest. The food was all quite delicious and fresh and did not rely on excessive salt or butter, though they did advise when one dish (the Bass) would be a bit rich. With the wine pairing though, not only do they match for flavor but also for function, so taking sips of wine after each bite not only enhances the flavor of the food and wine but also helped with cutting any richness. The staff was incredibly attentive and they were in tune with the guests and each other. A major portion of the kitchen is in the center of then restaurant so you get to watch Matthias and his staff at work. What impressed me was the calm and quiet in the kitchen. It was meditative to watch. The staff were courteous, extremely knowledgeable about all of the food and the drink. Our main server, Karolin, seemed genuinely happy to answer any questions, including some we had about things to do in Tallinn (she twice went to write down names, address, and phone numbers for places she recommended.
Overall this was one of the best overall dining experiences we’ve had. I look forward to following Matthias and 180 degrees and I expect some more Michelin stars in his future.
