ビリー・ローレスは、歴史的なGageビルで人生の新たな章となるAcantoのオープンの発表を喜びました。Acantoはアカンサスのイタリア語を翻訳したもので、この花葉はローマ時代の建築に使われたことで知られています。また、建築家のルイス・サリバンが「18南ミシガン通り」の由緒ある歴史的建造物の外観の特徴的なテラコッタ装飾に使用したことでも有名です。Acantoはカジュアルでシンプルなイタリア料理を専門としています。キッチンを率いるエグゼクティブシェフのクリス・ガヴロンスキは、手作りのパスタ、沿岸料理、石窯焼きピザ、豚肉店を提供しています。イタリア料理にはペアとなるドリンクが欠かせません。ビバリッジディレクターのジョン・マクダニエルがこの仕事を引き受けています。トレントやピエモンテで暮らしたことのあるジョンは、イタリアの20のワイン地域から自ら選んだワイン、イタリアの地ビールのビッラ、スピリッツディレクターのマイケル・ペイジが手がけたイタリア風スピリッツを提供しています。

Either not enough wait staff or our server was just terribly slow. Just annoying to sit there waiting to order a first drink and apps. Annoying to wait to order mains. Annoying to AGAIN WAIT FORVER to order dessert. We’ve come for years and each time gets further apart.

The food was exceptional and the staff really knew about celiac disease and what could be served. The host dealt promptly and professionally with an issue concerning other guests such that our evening was perfect. The only really minor downside was that my wife ordered a dessert - but because the management had started to release staff for the evening, our server was left very busy - and the dessert never arrived. As I say, a really minor point

Excellent food and beverage and service. Price of wine is high. The only negative was the music did not fit the atmosphere.

Acanto is an excellent restaurant, but it is not inexpensive. The cuisine is as good as in Italy, quite rare in the US. It does have a creative turn, and it works—e.g. a deconstructed buffala in a caprese (liquid representation). The staff is helpful and courteous. Unlike Italy, American staff is endlessly circulating and taking plates—unnecessary but part of the cultural context here. In sum, excellent local, food, service—expensive and, for my taste, a much too busy atmosphere. I would definitely return.
