Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

    The owner and hostess were very pleasant and fun! They accommodated all their guests and the select menu offered many options at a fixed price. We had a wonderful New Years Eve evening thanks so much!

    Great food. Don’t go if holiday and you are a party of 1. You’ll sit at “the bar” which is not a bar…but the check-out counter.

    Hi Laurie, we understand your sentiments. Our GM did try her very best to accommodate you considering we had ZERO tables left for a New Year's Holiday which is our busiest night of the year. Though she explained it would be at the bar since you had a reservation only for 1, I hope you can consider her efforts as every table was for a reservation for 4-18 per table. We hope you'll come back another time when we have more availability to seat you at a table by yourself. Our warmest wishes for a happy and blessed 2025!

    We went for New Year’s Eve and had the pre-fixed menu. The service was good but the food was fair, at best. I expected better for the price being charged. I’ve been to Choplin’s in the past and never had a negative experience.

    Hi Brandi! Firstly, thank you for coming in to celebrate New Year's Eve with our family at Choplin's. We do our very best to make it special as it is a big holiday. That said, with our price point of $85 for a 4 course meal during the biggest holiday of the year, while the industry standard is above $100/ person for New Years Eve, it's unfortunate that you felt you did not get what you expected. We try to accommodate the best we can to those who are fortunate enough to get a reservation during New Year's Eve as we usually have over 100 people on the waitlist. Hopefully, if you give us another chance, you'll enjoy your visit next time around during the busiest season of the year in the hospitality industry and that we can meet your expectations.     We’ve dined many times at Choplin’s and recently noticed a lot of nice changes. We dined with our family of 10 for Christmas Eve and the place was buzzing but the staff handled things very well. There was one table next to ours that complained about food taking awhile, but what do you expect during a packed restaurant on Christmas Eve?? We were just happy Choplin’s was open so we didn’t have to cook dinner at home! I’m sharing this because people need to have better expectations. It’s not a fast food restaurant folks. Choplin’s will always be our spot to celebrate with family because even with the tremendous growth they’ve had, the food has remained perfection, the staff are warm and friendly and the service and experience continues to be top notch! Bravo to the owners for keeping this lovely gem one of the best around and more importantly, for all you do in the community! God bless you for years to come! See you again soon for our next family celebration!

    Our family went for Christmas Eve which had a limited menu. Great options and overall food was good but service was extremely slow. We were there for 3 hours. While we had a group of 14, it was not crowded and we had to track our server down several times. It was a holiday so I’m sure staff was limited. Overall we had a good dinner. However for $85 per person, I don’t believe we would do it again.

    Our family from NY cerebrated Christmas at Choplin’s for the first time after hearing great things about the restaurant from friends in the area. We could not have chosen a better place to celebrate. The food was delicious, portions were huge and the dessert menu had something for everyone! For a group of 15, it’s not easy to satisfy everybody and Choplins nailed it! The interior has modern touches, yet warm and friendly. We can’t wait to return to this family operated gem. The service was impeccable even with so many Christmas parties going on. We live in New York City where there are amazing restaurants. I would recommend Choplin’s to anyone who has high expectations for steaks and seafood. Thank you for making our family celebration truly memorable! Kudos the owners Faith and chef Wes who came out to check on our group and to Samantha who made sure everyone enjoyed! Merry Christmas!

If there is another opportunity where you'd like to celebrate a birthday at Choplin's, please let us know what specifics you'd like for our staff to prepare ahead of time so we can be sure to plan exactly what you would like for them to do. Thank you for understanding that we are a restaurant with more than 100 reservations each shift, especially on the weekends and it is not in our control to know your expectations unless you provide it ahead of time.     We had a lovely dinner. It was busy but the staff handled the holiday rush of parties and patrons with expediency and smooth service.Always a wonderful meal and experience there.

    We had a wonderful Christmas party with our friends and family on Friday. Our group was larger than most of the parties there (14 of us), but our server Allie did a fantastic job. The food was amazing and we were happily surprised to see Classic Filipino Steak on the menu! We met Faith, the wife and business partner of chef Wes who is the founder of Choplin’s and found out she’s Filipino, hence the special steak on the menu. She was very hospitable, as well as her cousin Samantha who is the manager who continue to check on our group throughout dinner service. We love that it’s a family operated restaurant. You can really feel it in their service. Thank you Choplin’s for a wonderful 1st experience, especially on such a busy night! Salamat po! We will be back!
