   Celebrated my birthday dinner with you guys. Food and drinks were great. The service was super slow and multiple times throughout the night our drinks were empty without any sense of urgency to ask for another drink. I had to ask our server/bussers multiple times if we could get another round of drinks going. Food and drinks also took quite a while from beginning to end. A three hour dinner is a bit much. The dry aged ribeyes (no bone) were also super thin which was a little bit of a let down. Overall, good experience with my buddies at the Chef's table and I would go back again. Hoping the items I mentioned are better next time.

   Upon entering, we were greeted with a smile by the hostess. We were asked to follow her and she walked at a comfortable pace asking how we were. All the staff was wonderful and very knowledgeable. The table was sat with all the necessary items, and the glass and cutlery were free of fingerprints and spots. The amus buche was wonderful, as were the appetizers, and sides. The wine list was scant on options for "by the glass", but the list did include a nice assortment of bottles. The food was prepared at the correct temperature, and was pleasing to the eye. The T-bone steak was cooked as requested, but was dry, tough, and lacked flavor. My spouse's 21-day aged Rib eye was the same. The bill was correct and the check out was easy. We went to the bar for an after dinner drink. The bar was nice, the bar tenders efficient, and the drinks were a nice temperature and pour size. The ambiance was also pleasing to both the eyes and the ears. We will return, but just order a different type of steak.

   The service was excellent! The view and restaurant atmosphere were great. The steak was perfectly cooked. The portion size of the potatoes was small. The Broccoli Rabe as a bit tough to eat as it was undercooked. Otherwise, it was a very nice visit. Thank you

   We went for a birthday meal. It was excellent. The food was cooked to perfection which is always hard for me and my well done steak. No pink in the steak while the other persons was med and it was great. We always go here for special occasions and never had anything but great.

   SPECTACULAR! Four of us dined there on a visit to Colorado Springs and everything was perfect. (NOTE: 2 of us are full-time carnivores so when it comes to steaks, they are expert!). Starters included bacon and wedge salad – all outstanding. Cocktails (including alcohol free ones) were perfectly crafted and well-balanced. Entrees included a porterhouse steak, ribeye, shortribs, and a scallop entree – perfect. Our server, Stephen, personifies why the best in this business serve because it's their passion. This passion at Cowbow Star clearly starts at the top with their management. (I've forgotten the name of the manager, but she swung by our table and her joy for the restaurant business and creating outstanding dining experiences was palpable.) Run, don't walk, to eat at Cowboy Star. We can't wait to go back!

   Our server made the occasion really feel special. We were not rushed. And we really enjoyed the atmosphere. Great place to celebrate something special.

   We had a great time celebrating my husband’s birthday. They even created special menus that said happy birthday with his name on them. The manager hostess and the wait staff were amazing. Everything was very detailed organized and top quality! They made sure everything was up to our expectations

    Celebrated 20th wedding anniversary. The entire staff made it so enjoyable and special. The food was delicious and service fantastic.
