Our inspiration is the Zeus Faber, one of many local fish that can be fished sustainably and from our shores; although it has a wonderful Latin come Greek name, it also has a very British name - John Dory.
Faber is the Latin word for ‘Smith’ and as Smith is the most common name in English, we decided it sits well with our ethos - we want to be accessible to all.
Setting us apart from the rest is our commitment to working with local fishmongers who run out to the coast each evening to collect day-boat fish and local ingredients. This means that everything on our menu is fresh, sustainably sourced, and supports the local economy.
Our chef Ollie Bass believes in creating dishes that are not only delicious but also ethical and responsible.
