Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.
After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.
At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Great craft cocktails including our famous Smoked Orange Old Fashioned. Incredibly good desserts like Peach Cobbler and Pecan Pie. Super delicious Breakfast Tacos. And as always, good times!
I’ve eaten there twice. The plate dishes were not as good as the sandwiches. Great potato salad. The biggest disappointment was the cup of chili I was given. It was like soup, very little meat. I could not see any until I dipped my spoon in it to scoop it out. That is unlike any chili I’ve ever seen. Anyway I’ll be back for a sandwich and give the local business a chance again because the owner seems like a nice guy.

Food was only ok. Service was slow even though restaurant was far from crowded.
