Mariscos is a concept that was inspired by Sinaloa-style seafood restaurants and street food vendors known as "carretas." Mariscos restaurants in Sinaloa and throughout Mexico pay homage to this culture of fresh, raw fish marinated in lime and spices. Sauces based on habanero chili and chiltepin chili are the most important, followed by a wide variety of preparations such as aguachiles and tostadas.
