Paladar Rum Bar in Chicago’s new concept in Cuban dining gets its name from the paladares that were allowed in Cuba when private restaurants were not. The difference is that paladares are family-run and often located in personal homes. This personal touch to Cuban cuisine is the backbone of Paladar Rum Bar. Great flavors using family recipes as made on the southern coast of Cuba yet influenced from other providences makes it special.
The perfect starter at Paladar Rum Bar is the flavors of Cuba platter which includes three tostones, four croquetas and one each – empanada, papa rellena, slider and sope. Most people have had a Cuban sandwich at one time, but try the close cousin called medianoche which is similar but with a pressed sweet egg bread. A popular dinner specialty is the chivo, a slow cooked goat stew. Finish with flan, bread pudding or guava with cheese.
