Our aim at Simmer is simple – providing you with the honest-to-goodness pleasure of eating and drinking while you relax in your favorite neighborhood bar. Whether you’ve come for the food, drink, or both, we hope you will feel right at home. When you step into Simmer, you’ll be greeted with a friendly smile. We’ve fashioned a warm, comfortable dining room that spills over into a spacious outdoor patio, complete with an open fire pit and tranquil water feature. Enjoy “Happy Hour in the Round” during the warmer Colorado seasons when we open up our overhead doors at the back of our bar, creating 360° of indoor/outdoor seating. Food was OK (nothing special), drinks were pretty darn good, but when we still lingered at 8:30 (we had a 6:30 reservation so not a looong time), an employee (my husband saw him in the kitchen) walked in like a customer and said, "oh, I didn't think you were still open." Would have been better if our server had asked us to leave. Left a pretty bad taste in my mouth.

Once again, Simmer did not disappoint. The wine was great and the food reflected their ongoing efforts to subtly take their menu items to new heights. Service was terrific, and it continued to reflect the attitude and tone we have grown to expect there. Another pleasant evening!

We enjoyed ourselves thoroughly, the only issue of the reservation was that we had reserved indoor seating and were seated on their patio. Since it was enclosed, it was basically the same thing but lacked the inherent ambiance of being inside the restaurant. Food was excellent!

The bartender did not do a good job. My son ordered a Makers and ginger ale but got an old fashioned. I ordered a glass of wine and it was a really short pour (about 4 ounces instead of 6). Josh, our waiter, was as attentive as he could be but the restaurant was having issues of some sort going on.

Celebrating my son’s graduation from CSU and this was such a wonderful experience with great food options and ambience! Highly recommend and the cauliflower bites and Brussel sprouts are a delicious start.

Went to Simmer for the first time - the ability to make a reservation online was appreciated with kids. The menu had a lot of great options, though I think the prices were a smidge high. I also think the kids' meals are overpriced - especially the vegetarian options ($12 for a quesadilla seems high). The food was wonderful - I really enjoyed the Pasta Fresca and the other adults in our group really enjoyed their meals as well. A well-rounded menu with lots of options. Will be coming again, probably for date nights rather than family meals.
