Poke was originally prepared with chunks of freshly-caught fish, salt, seaweeds and roasted kukui nuts. Over time, the diverse people of the Islands adapted poke to their unique tastes, creating the many combinations of seafood and flavors you see at bodegas and poke bars all over Hawaii today.
Although it has undergone many different interpretations throughout the Mainland, we are committed to serving an honest representation of poke – freshly-caught fish, cut into chunks, marinated and served over a bed of warm rice. We stand by the tradition of marinating the fish. Chef Kohei Kishida has created a variety of signature sauces that showcase the myriad of flavors unique to Hawaii.
