The experience started out quite lovely. The menu options were explained to us clearly, and the primary menu elements were as I remembered from the Vegas location. We chose from the a la carte options rather than the tasting menu. The pacing started out well. We received our tapas options at reasonable timing intervals and were delighted with the presentation and flavor. The foie gras cotton candy was just as I remembered. Unfortunately, the experience devolved into a series of unprofessional service moments after this. My partner ordered the chicken, and I ordered the pork shoulder. The chicken came out first, and our server assured us that my pork would arrive a couple of minutes after. But we decided for her to go ahead and get started as time passed and we didn’t want the chicken to cool. Unfortunately, it took another fifteen minutes for my pork to arrive. Sadly, it wasn’t to the standard I had experienced in Vegas. To add insult to injury, we didn’t see our server for over thirty minutes. A party of young men that was seated next to us clearly had the attention of the entire service staff, as many stopped by to say hello and what felt like to kiss the metaphorical ring. We had no idea who they were, but the level of service we were experiencing greatly dwindled upon their arrival. To sum it up, it started out meticulous and ended sloppy.
