Yezo or ยโส is the name of the province in northeastern part of Thailand or well known as Isan where known for its rich and vibrant culinary culture, most of which revolves around rustic cooking techniques with flavorful of seasoning. (Imagine a lot of chillies, splashes of lime, and pungent condiments like fermented fish.)
