ファーガス・ヘンダーソンの「Nose to Tail Eating（鼻から尻尾まで食べる）」の出発点として、1994年にスミスフィールド・マーケットからすぐの場所にある、かつての燻製場を利用して開業しました。 St. Johnはイギリスの最高級の食材を重視し、なかでも最高の旬の素材を活用して、小細工のない調理技術を使用しています。今では世界最高のレストラン50軒に選出され、2009年にはミシュランの星を獲得しています。 鼻から尻尾まで食べるというのは、食べられるのであれば、動物のあらゆる部位を台所で活用すべきという考え方です。そこで、ローストビーフやレモンソールのほか、豚の脾臓、腎臓、牛の心臓、レバー、腸を巻いたもののほか、ローストした骨髄とパセリのサラダといった「特製」料理を提供しています。 ベジタリアン向きではないレストランと言われますが、キッチンではベジタリアン向けの料理を、肉や魚、家禽類、デザートを扱うのと同じくらい心をこめて調理しています。

    ミシェラン１つ星ですが、比較的予約しやすかったです（前日に予約できました）。肉料理、特に骨髄や肝臓といった内蔵料理が有名で、実際ボリュームもあり、濃厚で美味しかったです。ワインも手頃な料金のものが多数揃っていました。もしお肉料理がお好きならお薦めです。

    I’ve been going to St John in Smithfield for about 25 years. It’s still just perfect. The people who work there have a beautiful balance of knowing they are lucky to be part of that legacy but equally that they are what makes it so great. Brilliant staff. Brilliant food. Brilliant wine. I still love it.

    An amazing place with incredible food! The staff was extremely kind, friendly, and welcoming. We’ll definitely be returning! The madeleines were absolutely delicious, and we even brought some home with us.

    Bonkers delicious. Had a black velvet, the escargot salad special, and a glorious poached fish with chips. Glass of white. Chocolate mousse with creme fraiche for dessert. I rolled out of the restaurant!!! Service was fabulous and warm, and the ambience was great. A stellar meal! GO

    The starter dishes are good but the main (liver) dish is very meh, and the service is definitely not reaching Michelin star standard. Overall an OK experience but no motivation for visiting again.

    I only eat meat a few times a year. I have been eating here periodically since it opened and it always a pleasure . This time is no exception perfect for carnivores

    As always - while we don't come often we do book whenever we are in London - the food and ambience was top notch. Love the concept of St John and what they try to do to make their food delicious, original and yet sustainable. Flavours are rich and layered, simple in style but elevated too. The menu has a few items that appear repeatedly but there are also plenty of 'specials' to delight the regular visitor, and they showcase a number of non-typical cuts of meat and fish. There's also a varied wine list and their house wines, which are on the reasonably priced side of London's offerings, never cease to please. This visit's surprise revelation was a Jerusalem artichoke salad; chunks of the artichoke, perfectly cooked, lightened with watercress, flavour added with roasted shallot, olives and a tasty and sunny mustard dressing. Slightly disappointed in our choice of puddings, not to say that they didn't taste really good, though. If you haven't tried St John it is definitely worth a visit or three. (Also make time and space to try the filled doughnuts from one of their bakeries!)
