魅力的

ファーガス・ヘンダーソンの「Nose to Tail Eating（鼻から尻尾まで食べる）」の出発点として、1994年にスミスフィールド・マーケットからすぐの場所にある、かつての燻製場を利用して開業しました。 St. Johnはイギリスの最高級の食材を重視し、なかでも最高の旬の素材を活用して、小細工のない調理技術を使用しています。今では世界最高のレストラン50軒に選出され、2009年にはミシュランの星を獲得しています。鼻から尻尾まで食べるというのは、食べられるのであれば、動物のあらゆる部位を台所で活用すべきという考え方です。そこで、ローストビーフやレモンソールのほか、豚の脾臓、腎臓、牛の心臓、レバー、腸を巻いたもののほか、ローストした骨髄とパセリのサラダといった「特製」料理を提供しています。ベジタリアン向きではないレストランと言われますが、キッチンではベジタリアン向けの料理を、肉や魚、家禽類、デザートを扱うのと同じくらい心をこめて調理しています。

ミシェラン１つ星ですが、比較的予約しやすかったです（前日に予約できました）。肉料理、特に骨髄や肝臓といった内蔵料理が有名で、実際ボリュームもあり、濃厚で美味しかったです。ワインも手頃な料金のものが多数揃っていました。もしお肉料理がお好きならお薦めです。

Outstanding! Hands down the best restaurant we visited during our Paris/London trip. Better than the michelin 2 star we visited in Paris. Everything and everyone was borderline perfect. Make an early reservation as they do run low on items later.

We live in Manhattan, and are in London nearing the end of our ten day stay. Our supper at St. John's was surely the single best dining experience we have had. The quality of the meats, fish, and vegetables, and cooking that sharpened their distinctive flavors (without fuss), was evident from beginning to end. Our server, too, was a firm and brilliant guide as we were making our choices. Cheers and thank you to everyone at the restaurant who make it so memorable.

Excellent food and service. Fantastic fish soup. Tried lamb sweetbreads for the first time, exceeded my expectation. Probably the best Welsh rarebit I’ve had. Bread and butter pudding great. Service excellent

I enjoyed a delightful meal with my partner and our friend visiting from the U.S. here for a late lunch service. The service started with a really nice crusty bread and butter - I was impressed with the crunchy and moreish crust on the bread. I also had a delightful Punt e Mes vermouth to stimulate the appetite and shared an order of the crispy pig skin, which was an interesting bite, a bit like pork scratchings elevated with a cocktail-like dipping sauce. We also shared a starter and I enjoyed a piece of the lamb's liver with some radicchio and pickled walnuts - a lovely combination of umami, light bitterness, sour, and sweetness. For my main, I enjoyed a John Dory with tartare sauce and the house glass of white wine - the John Dory was lightly pan-fried and each bite was just delicate perfection - and it was also so fun to get the entire fish served and eat it head-to-tail, in light of the "nose to tail eating" ethos of the restaurant. I also had a chance to try the Welsh rarebit, which provided some interesting toasty cheesy bite served with Worcestershire sauce. Last, for my pudding, I had a rhubarb sorbet with vodka and a glass of Calvados as a digestif - a bit of a boozy end, but so delectable - almost like a palate cleanser. Overall, this is a great restaurant that serves delicious plates, with a daily-changing menu and where somewhat simple, rustic dishes are elevated but without feeling pretentious or stuffy. I will definitely return!
